We see there is room for improvement here. Twice a week is not enough, in and of itself, to supply enough retinol as a bioavailable form of vitamin A. If you take two eggs per day that would cover you with a reasonable foundational intake for you to go the distance. As you are pondering, supplementing with beef liver on a regular basis, at least once per week, would be extra insurance Your dog would love it as well.
